Yellowfin tuna tempura, ponzu, truffle salt;

Mr Brown's mushrooms, black garlic sabayon, smoked shoyu dashi  (v);

Handmade pasta: smoked ricotta and truffle caramelle, dashi butter, alliums  (v);

Cape grim eye fillet, sake braised tropea onion, popcorn, tataki;

Yuzu meringue tart.
