At Institut Polaire, you will fall in love with graceful wine, aromatic gin and artisan whisky from cool cats across Tasmania and beyond.
Dive into some of the world's most revered and challenging cold climate terroir with an emphasis on low input, organic, biodynamic farming and natural techniques. Think grower Champagne, ‘riesling to die for’ and pinot noir from emerging local talent alongside international icons. You will find cult names like Keller, Raveneau, Robinot, Ganevat, Mikulski and Weinbach along with our own Domaine Simha.
Masterfully crafted cocktails draw on classic roots inspired with Tasmanian flavour like smoked applewood salt, leatherwood honey and mountain pepperberry bitters. A highly curated spirit library showcases the best of Tasmania alongside English, Icelandic, Belgian and Nordic gin, alpine amaro, absinthe, aquavit and Islay, Japanese, Finnish and Alpine malt whiskies.
Try an økar spritz, cucumber infused icebreaker, aurora, yuzu sour, glacier, sazerac or smoky old fashioned.
Your choice of Antarctic dry, saffron, gibson, breakfast or vesper martini crafted with our own Süd Polaire gin is a house speciality.

Sessions cater from 1 - 12 persons and include 5-6 tasting samples accompanied by notes and a cheese platter to share.
