At Institut Polaire, you will fall in love with graceful wine, aromatic gin and artisan whisky from cool cats across Tasmania and beyond.
Dive into some of the world's most revered and challenging cold climate terroir with an emphasis on low input, organic, biodynamic farming and natural techniques. Think grower Champagne, ‘riesling to die for’ and pinot noir from emerging local talent alongside international icons. You will find cult names like Raveneau, Keller, Ganevat, Mikulski and Weinbach along with our own Domaine Simha.
A menu of daily plates features fresh and organic fare from local growers and artisan producers. Tasty wine bar snacks embrace provincial style dishes from further afield. Look out for the mystery wine challenge and specialty G&T flights.

Masterfully crafted cocktails draw on classic roots inspired with Tasmanian flavour like smoked applewood salt, leatherwood honey and mountain pepperberry bitters. A highly curated spirit library showcases the best of Tasmania alongside English, Icelandic, Belgian and Nordic gin, absinthe and aquavit, northern Italian amaro and Islay, Japanese, Finnish and Alpine malts.
Try an økar spritz, cucumber infused icebreaker, signature aurora, yuzu sour, glacier, sazerac or smoky old fashioned.
Your choice of Antarctic dry, saffron, gibson, breakfast or vesper martini crafted with our own Süd Polaire gin is a house speciality.

As the home of Süd Polaire gin and Domaine Simha wine, we offer a range of structured tasting experiences throughout the year.
Sessions cater from 2 - 10 persons and include 6 tasting samples accompanied by notes and a cheese platter to share.
Available from 2-5pm during opening hours, please allow approximately 45minutes. Stay tuned for specialty themed classes released from time to time.
