This cold climate wine bar and kitchen embraces Tasmania’s long held status as the gateway to Antarctica with a passion for everything coldhearted.

Enjoy a menu featuring fresh and organic plates from local growers, fishers and farmers. Think native angasi oysters, handmade pasta, stripey trumpeter sashimi, house cured salumi and charcuterie from the berkel slicer and mouthwatering King Island beef.     

Sip a signature Süd Polaire Antarctic dry martini, savour new wave Tasmanian pinot noir, alpine amaro or nurse your single malt whisky.

At Institut Polaire, you will fall in love with graceful wine, aromatic gin and artisan whisky from cool cats across Tasmania and beyond. 
Dive into some of the world's most revered and challenging cold climate terroir with an emphasis on low input, organic, biodynamic farming and natural techniques. Think grower Champagne, ‘riesling to die for’ and pinot noir from emerging local talent alongside international icons. You will find cult names like Keller, Raveneau, Robinot, Ganevat, Mikulski and Weinbach along with our own Domaine Simha.

Masterfully crafted cocktails draw on classic roots inspired with Tasmanian flavour like smoked applewood salt, leatherwood honey and mountain pepperberry bitters. A highly curated spirit library showcases the best of Tasmania alongside English, Icelandic, Belgian and Nordic gin, alpine amaro, absinthe, aquavit and Islay, Japanese, Finnish and Alpine malt whiskies.

Try an økar spritz, cucumber infused icebreaker, aurora, yuzu sour, glacier, sazerac or smoky old fashioned. 

Your choice of Antarctic dry, saffron, gibson, breakfast or vesper martini crafted with our own Süd Polaire gin is a house speciality.

TASTING EXPERIENCEs


As the home of Süd Polaire spirits and Domaine Simha wine, we offer a range of coldhearted tasting experiences. 

Sessions cater from 1 - 12 persons and include 5-6 tasting samples accompanied by notes and a cheese platter to share.

Master the ultimate martini in this engaging session at Institut Polaire. Uncover the secrets of our famous Antarctic dry martini and immerse yourself in the world's most infamous cocktail. Discover the thrill of transcendent flavour, glacial cut and bracing antarctic dry spirit that is Süd Polaire. Hear tales of the glory days when gin and James Bond were all the rage.

A top mixologist will show you how to tailor the perfect martini and its variations. Whether its shaken or stirred, super dry, dirty or with a twist, you will be mixing it like a pro in no time.
