GIN TASTING | MARTINI MASTERCLASS
Süd Polaire gin tasting experiences ($45pp) include five tasting samples accompanied by notes and a cheese platter to share, available from 4-5pm Saturday and Sunday.
Martini masterclasses ($150pp) include martini variations paired with snack plates, available from 4-5pm Sundays only.
Please book in advance and allow approximately 45 minutes for your experience.
Cellar door sales, drinks and snacks are available for purchase in the wine bar afterwards.

SüD POLAIRE GIN EXPERIENCE
Discover the thrill of transcendent flavour, glacial cut and bracing Antarctic dry spirit.
Take a seat at the snowy marble bar at Institut Polaire to immerse yourself in the world of Süd Polaire gin. A top mixologist will share the origins of Süd Polaire while you taste your way through the range of Antarctic dry, expedition strength, saefron, cru and rare styles. Learn the secrets of distillation and taste the influence of local botanicals. An artisan cheese platter to share, enjoyed between samples completes the experience. Our spirit is formed by the nature of our environment; an archetypal wilderness of mountain, mist and cloud forest at the edge of the world. It is balanced by pristine Tasmanian rainwater swept across a vast expanse of Southern Ocean from Antarctica; the coldest, driest, windiest place on earth. Süd Polaire gin is micro batch distilled and bottled by hand in Tasmania. Only the purest hearts of superbly smooth, triple distilled wine spirit make this an excellent martini gin. A gin lover's dream.

DOMAINE SIMHA WINE EXPERIENCE
Unearth Tasmania's most compelling avant-garde wine.
Take a seat at the snowy marble bar at Institut Polaire to uncover the wines of Domaine Simha. Explore the cold climate terroir of Tasmania's Derwent Valley wine country. Crafted by hand, just 2-3 barrels of each Domaine Simha wine are made each year. An avant-garde approach shapes living wine relying on ancient knowledge and intuition. At heart lies the epic beauty of Tasmania’s pure natural environment, sparkling air and ancient soil. Founder and winemaker, Nav Singh’s natural methods embrace harvesting by lunar cycle, wild fermentation and maturation in clay amphorae and demi-muid with superb ageing potential. The house of Simha originates from sanskrit for lion.

A top mixologist will show you how to tailor the perfect martini and its variations. Whether its shaken or stirred, super dry, dirty or with a twist, you will be mixing it like a pro in no time.
